Memorial Day!

After a year of missing all American holidays I was unusually excited for Memorial Day.  My family and I were having an impromptu cook out with all the usual fixins of potato salad, deviled eggs, baked beans, corn on the cob, hamburgers, hotdogs and my special dessert of strawberry shortcake.
 I made it from bisquick and they turned out to be really delicious.  You just cut them in half top them with strawberries and whip cream and eat up!  The recipe calls for 2 1/3 cups of Bisquick, 3 tablespoons of sugar, 1/3 cup of milk and 3 tablespoons melted butter that you mix up.  I used a pastry blender to break up the bisquick chunks.  Then you spoon out enough to make 6 biscuit sized shortcakes.  The oven has to be at 425 F and they cook for 10 - 12 minutes.  I had originally wanted to make a raspberry lemon cake but my mom had already gone strawberry picking and we had loads.

After lunch, my friend Kirby and I went outside to wash our black lab Duke who was pretty smelly after going into the pond.  He wasn't too happy that we were waisting precious swimming time to clean him and whined the whole time.  I swear I have never met a dog that is a bigger baby than Duke.
Once we let him loose he ran straight to the pool to play with our other two dogs, Charlie and Jack who are golden retrievers.  Eventually, my sister and I got into the water too, only to be attacked by Duke, our separation anxiety dog.  Whenever he feels like he can't get to you he freaks out.  So whenever we would be in the middle of the pool he would jump into it and swim over to us.  Cute but not so fun when he starts to paw at you scratching your arms and legs.

Overall, it was a pretty successful Memorial Day.  I even have some plans for the 4th of July to make it a big event!  Did anyone else do anything fun for Memorial Day?  What about plans for the 4th?  I know it's more than a month away, but I'm already excited!  Any excuse to wear red white and blue and eat picnic food makes for a great day!

  1. I worked all night. And practiced before that. I'll be at the beach for the 4th. You should be too. Big house party, my place, kegger of natty light.
